It's Rhubarb Season!

Nothing says summer like fresh rhubarb!  

Rhubarb pie, rhubarb & strawberry slushie, rhubarb bread - what can I say - my family is addicted to rhubarb!  

My rhubarb plant was planted last year and I was surprised to learn that it takes a full year for rhubarb to become sturdy enough to be picked and enjoyed.  This year we will get 2 or 3 pickings from our rhubarb plant.  I asked my mom, Geri, to help me cut the rhubarb AND she was nice enough to make us the rhubarb bread too! 

For this picking we are only going to cut a third of the plant.  This way we can hope for maybe a second or third cutting. I am also including her wonderful Rhubarb Bread Recipe.

Geri's Rhubarb Bread Recipe:

Ingredients:

   1 1/2 cups brown sugar

   2/3 cup salad oil

   1 egg

   1 cup sour milk

   1 tsp each salt, soda, vanilla

   2 1/2 cups flour

   1 1/2 cups fresh rhubarb

Directions:
   Stir ingredients together. 

   Pour into 2 greased loaf pans. 

   Bake at 325 degrees about 60 minutes. 

   Don't overbake.
