Timing Cilantro Just Right

One of the challenges that I have been faced with since gardening has been timing.  I am growing tomatoes because I want fresh salsa.  I am growing cilantro and jalapeno peppers for the cilantro - but sometimes they are not ready at the same time.  It feels pretty anti-climatic going to the grocery store to buy tomatoes because the cilantro and jalapenos are ready, but the tomatoes are not.  

In the summer cilantro comes up nice and abundantly and there are many wonderful things you can do with it, besides making salsa.  So what do you do while waiting for those tomatoes to ripen up nicely?
